I love squid. Cannot get enough of the creature. Especially when it comes served to me as a tasty tapa. It lends itself so well to spice and red wine inspired sauces. Here's a spicy recipe to savour.


500 grams of squid, cleaned, prepared and cut into 5cm/2 inch pieces
100 mils of olive oil
1 onion, coarsley chopped
200 grams of tomatoes, coarsley chopped
2 cloves of garlic, crushed
1 red pepper, seeded and chopped
1 bay leaf
200 mils of red wine
100 mils of fish stock


Heat the olive oil in a large saucepan. Add the squid and stir fry for 1 minute. Add the onion and tomatoes and fry for a further 5 minutes. Add the garlic, pepper, bay leaf, red wine and stock, stir and then simmer for 20 minutes. Serve hot in earthenware dishes, along with crusty bread.
