Sometimes, when entertaining friends at home in Spain, you need something a little different to welcome your guests while you prepare more substantial meals. You can make this snack, that is very popular in the north of Spain, using cold or cured meat, pickled tuna, salted fish or - as is the case here - anchovies.


12 small capers
12 canned anchovy fillets in oil, drained
12 pitted black olives
12 small gherkins
12 silverskin pickled onions


Using your fingers, place a caper at the thicker end of each anchovy fillet and carefully roll it up so that the caper is totally enclosed. Thread one caper filled anchovy, one olive, one gherkin and one pickled onion on each of the 12 cocktail sticks or toothpicks. Chill and serve.
