Salchichon is the Spanish salami, but with a flavour distinct from continental varieties. Lomo (cured pork loin) is one of the best kept secrets of Spanish charcuterie; finely sliced it can eclipse even quality Spanish ham in taste and texture. Cecina, another little-known gastronomic treat, is slow cured and smoked prime beef, typical of the Leon region of northern Spain. Morcilla is the Spanish version of black pudding - one of the most popular meat products in the UK.
