| What is it? |
A small, greyish-brown and subtly flavoured lentil.
Rich in iron and magnesium, with a fine skin, smooth consistency and delicate centre, the Pardina is exquisite in all lentil dishes. As well as being tasty and healthy, the Pardina de Tierra de Campos also forms part of a natural and sustainable ecological system. The lentil plant is a good natural source of nitrogen, producing enough to cover its own needs whilst regenerating the soil for future crops.
These truly are the finest lentils you can get your hands on. Use in the preparation of a classic 'Lentejas con Chorizo', perhaps with the addition of morcilla.
