This is the variety of rice most commonly used to make paella, but subjected to a special process which limits its capacity to absorb water. It can therefore be prepared and left for a number of days without over-absorbing water and turning into a soggy mess! Popular in restaurant environments where rice is precooked and kept in the fridge, but also useful if you like to make up a big batch of a rice dish and eat over a number of days. |
