The most celebrated Balearic cheese - Mahon. This is arguably the best variety - the semicured - presented a perfectly balanced taste.
The texture is typical of a semicured Spanish cheese - on the hard side of medium, but definitely not in crumbling Parmesan territory - just right for a firm, pleasing bite.
The taste is well developed, just what you would expect of a medium mature cheese, with a good amount of salt. It's not exactly mild, but as it's a cows milk cheese, it does lack that characteristic sheep element of Manchego and mixed milk Spanish cheeses, which many people will prefer.
