| What is it? |
Firstly, this isn't the soft fresh goats cheese that is more common in the UK. This cheese has been matured for between 45 and 60 days to give a much firmer texture and developed flavour. It is then soaked in red wine repeatedly to infuse it with an extra level of flavour. The beautiful intense burgundy colour on the rind is a clue to what lies inside!
