High quality anchovies in oil, elaborated naturally tomaintain their original qualities. Known as 'Boquerones al Ajillo', or white anchovies in vinegar, they are marinated and preserved in the traditional style - a mix of oil and vinegar. Once opened, try to keep the anchovies covered in the liquid as much as possible. They should last for about a month kept in the fridge.
